Blueberry Crumble Recipe

We recently went blueberry pickings, which I have to blog about. Since then, I have a ton of blueberries, but not a ton of different recipes. When talking about what to make, I knew I had to try a crumble.

Believe me… I’m happy I did!

This dessert was so easy to make and tasted so fresh. We picked them one day and made this the next. It was amazing.

I have a feeling this will be another staple dessert I bring to parties in the future.

Here’s what you’ll need to make this Blueberry Crumble:

  • 2 cups of blueberries
  • sugar
  • ½ cup light brown sugar, packed
  • ½ cup all-purpose flour
  • ½ cup quick cook oats
  • ¼ cup unsalted butter, softened
  • 1 teaspoon cinnamon

First, preheat your oven to 375 F.

While it’s heating up, spray your crumble pan with cooking spray or spread water. Then, add the layer of blueberries at the bottom. Sprinkle sugar on top of the blueberries.

We used red colored sugar for ours!

Then, mix the crumble topping (sugar, flour, oats, cinnamon, and butter) in a bowl. When it’s all combined, spread on top of the sugared blueberries. To give it some extra flair, you can sprinkle some extra cinnamon sugar on top.

When the oven is preheated, place the blueberry crumble in for 25-30 minutes.

We took ours out at the 25 minute mark and added festive sprinkles. Then baked for an extra five minutes.

Serve this delicious dish warm with whipped cream or ice cream!

Lucky Charms Dipped Oreos

What’s better than regular gold? Gold you can eat and you’ll love the taste of these Lucky Charms Dipped Oreos.

This simple recipe can easily be done for an after school snack or whenever you have a quick five minutes to make some magic. You can even enjoy it with yummy leprechaun milk, which your kids will love even more.

Mila and I have still not saw the leprechaun playing tricks in our house. Our Pete the Cat book told us the only day you can catch one is on St. Patrick’s Day so we’re getting all our leprechaun bait ready.

We’re working on our leprechaun trap to set out the night before St. Patrick’s Day too! Hopefully that’ll do the trick.

This little recipe here was supposed to be leprechaun bait, but Mila decided it would be better suited for little girls. So, she just ate them instead. I can’t say I blame her!

For another magically delicious treat, you’ll need:

  • Golden Oreos
  • Lucky Charms
  • White Chocolate

The first thing you need to do is melt your white chocolate. I used the microwaveable kind because it’s way easier and quicker for us. Just make sure you microwave in small increments and stir frequently.

After it’s all melted, dip your Golden Oreos in the white chocolate and set them on wax paper.

Before the chocolate is cooled, place Lucky Charms on them. I did it randomly and in between coating the Oreos. The chocolate seemed to cool off pretty quickly!

While you wait, you can make some leprechaun milk to enjoy with your Lucky Charms Dipped Oreos.

All you need to do is add some green food coloring to milk and enjoy!

Mila was very pleased with these and did not seem to want to share with the leprechaun in our house. It was a fun little snack that only took a few minutes to make.

Easy Leprechaun Parfait

If you’re in the midst of leprechaun hunting this year, you might be able to tempt one with this Easy Leprechaun Parfait.

With only a few tasty ingredients, your little ones won’t be able to resist the temptation of trying this magically delicious treat.

Mila is on a full fledge hunt for a leprechaun before St. Patrick’s Day. The one in our house has already turned all our milk green and is hiding things of her’s. We have a few tricks up our sleeve to capture him.

One tasty way we came up with was getting our leprechaun to try a tasty parfait. Of course filled with all a leprechaun’s favorite things…

Here’s what you’ll need to charm a leprechaun with this treat:

  • Lucky Charm Cereal
  • Vanilla Pudding
  • Food Coloring

The first thing for the sweet treat is to have littles separate the Lucky Charm’s cereal and marshmallows. Mila loves doing this and sneaking a few to eat too!

While they’re doing that, put green food coloring in the vanilla pudding. Of course leprechauns LOVE the color green. Mix it up until it’s consistently green. I tried to make it a lighter green, but it all depends on the amount of food coloring you put in.

Once you and your little are done, it’s time to start layering.

Our layering went like this: cereal, pudding, cereal, pudding, marshmallows. Personally, I think it was a pretty good decision.

The best part was, Mila was super excited to try this since it was for the leprechaun. She ate SO much for it, but left a little bit to catch one. They’re small anyways!

Pumpkin Pie Crescent Rolls

Want to know my favorite part of Thanksgiving dinner? The desserts! I think it’s a lot of people’s favorite part too. Pumpkin pie, in my opinion, is the best pie of the day.

This year, I’ve taken this classic dessert and out a little twist to it and made: Pumpkin Pie Crescent Rolls.

Even though I love pumpkin pie, these Pumpkin Pie Crescent Rolls taste even better!

Here what you’ll need to make them:

  • 2 crescent roll tubes
  • 1 cup of pumpkin purée
  • 2 egg yolks
  • 1/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 tablespoon pumpkin spice
  • 1 teaspoon vanilla

First, preheat your oven to 375 F. Then you can line your baking sheet with parchment paper or spray your sheet with nonstick spray.

I used nonstick spray and they turned out great.

Then, mix the pumpkin purée, sugar, brown sugar, egg yolks, pumpkin spice, and vanilla in a bowl.

Next, unroll your crescent rolls. You can cut them in half, but I just went with how they were packaged instead of making smaller rolls.

After unrolling the rolls, spoon one tablespoon (or make your best judgment) of pumpkin pie filling on to the crescent roll. I liked putting a little extra so some of the filling came out.

Next, put them in the oven for 10-12 minutes and they’re done!

I ended up putting sugar and pumpkin spice on them when they were finished. It just made the flavoring pop more.

And who doesn’t love extra pumpkin spice.

Although we ate them as is, I think they’d be delicious with whipped cream or ice cream. Maybe even some caramel drizzle over them too! Either way, you’ll want to take these to your Thanksgiving dinner!

Banana Split Bites Recipe

It’s National Banana Split Day! Mila and I put a spin on this summer treat and made it bite sized. This recipe is perfect for toddlers or adults who want the taste of a banana split, but don’t want to commit to a regular sized one. I promise, these Banana Split Bites pack all the things you love about a banana split in one bite!

Before I go on… did you know banana splits originated from Ohio? Ernest R. Hazard invented the banana split in Wilmington, Ohio in efforts to attract college students to his restaurant. I think he was on to something!

Anyways, here’s what you need for this tasty treat:

  • Bananas
  • Whipped Cream
  • Sprinkles
  • Chocolate Sauce
  • Maraschino Cherries
  • Toothpicks
  • Any other ice cream toppings!

To start off, just cut your banana in little circles. I ended up freezing mine before assembling too because I love the taste of frozen bananas. Then, spoon ice cream on the banana. Add ice cream toppings and secure everything with a toothpick.

It really is that easy!

Mila and I used whipped cream, sprinkles, chocolate sauce, and maraschino cherries. It would be fun to do classic toppings on different bites too!

This treat would have been awesome for our Ice Cream Bonanza. We did an ice cream topping charcuterie board. It would be so cute to do a Banana Split Bites bar where people can assemble what they wanted themselves. I think that’s a perfect fourth birthday idea for Mila…

Strawberry Chocolate Chip Cookies Recipe

One of the best and most classic desserts are chocolate chip cookies. They’re gooey and make you feel all warm inside. Up until now, I didn’t think they could get any better, until we added one ingredient: strawberries.

This new to us recipe is one I HAD to share with everyone, especially before National Chocolate Chip Day. Not only did we enjoy the finished results, Mila had a blast making these too.

Maybe a little too much fun with the extra flour!

Anyways, here’s what you’ll need to make these delicious cookies:

  • 2 1/4 cups of flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 stick of unsalted butter
  • 1/2 cup of sugar
  • 3/4 cup of brown sugar
  • 1 tablespoon of vanilla extract
  • 2 large eggs
  • 1/2 cup of chopped strawberries
  • 1 cup of chocolate chips

Before making the cookie dough, preheat the oven to 370 F. Then line two large baking sheets with wax or parchment paper.

In a medium size bowl, whisk together the flour, baking soda, and salt. Set aside.

Next, in a large mixing bowl, use your mixer to cream the butter, sugar, brown sugar, and vanilla extract. I let my butter warm up a little bit to help it cream. Honestly, I just popped it in the microwave for 20 seconds.

Then, add eggs in one at a time. Mix in between eggs.

After it’s mixed, slowly add the flour mixture in. Just mix it until combined and don’t over mix.

Once you get a good dough consistency, fold in strawberries and chocolate chips. I used a spatula for this.

Now it’s time to place them on the cooking sheet. You can use an ice cream or cookie scoop to help with this part. I just used my hands and made little balls. It was way easier for me this way than using a spoon or anything.

Then, place in the oven and bake for 10 minutes. Rotate the cookie sheet after and place back in the oven for 4-6 more minutes. Your cookies should have holden brown on their edges.

Once it’s done, remove from the oven and let them cool down… or not.

We enjoyed these cookies a little too much. I have a feeling it’ll be a recipe we make over and over again.

Red Velvet Cookie Recipe

If you need a last minute Valentine’s Day treat/present or are really craving something delicious, you’ll love these cookies.

They take about twenty minutes to make and everyone will want more. It’s easy too!

This recipe also reminds me of Jensen. I craved these throughout my pregnancy. They’re always fun to make and honor him too.

The best part of this recipe is there’s only FOUR ingredients:

  • Red Velvet Cake Box
  • Two Eggs
  • 1/3 Cup of Vegetable Oil
  • Powdered Sugar

First, preheat your over to 375.

Then mix the red velvet cake box, eggs, and oil together. It’ll get to a cookie dough consistency. When it does stop mixing.

Next, make the dough into little balls. I did one at a time and then coated them into powdered sugar. Without the powdered sugar, they’ll stick to a baking sheet. That makes it hard to pick them back up again.

Put them in the oven for ten minutes.

After you pull them out, you’ll notice they’ll fall. Don’t worry, they’re not supposed to stay risen. They still taste fluffy!

One little word of caution with the doughs stickiness… throw some flour or something on your hands.

Mila tried to help before I could cover her hands and…

She had fun helping roll little cookie balls, but it got messy quick!

This would definitely be a great and quick way to surprise your kids, partner, or whoever your celebrating Valentine’s Day with!
